Eat your leafy greens. Dark green vegetables are good for you. Leafy greens are the most nutritious vegetables. You’ve heard it all. But do you actually eat them on a regular basis? Need nutritional information and recipes to get you started?
I am going to do a series of posts on some different leafy greens. This week I am spotlighting kale. Kale is one of the top dark leafy greens to eat for nutritional value. It makes into lots of top ten foods or top ten vegetable lists.
Kale is very high in Vitamin K, Vitamin A, Vitamin C, carotenoids and flavonoids. It’s got a healthy dose of fiber and omega-3 fatty acids as well.
