Coconut Flour Brownies/Muffins
Disclaimers/Tips: 1.They will not look like the photo on the left. 2. These are not really “low-carb” with all that honey, but they are grain and gluten free. Because of the honey, only indulge in these on rare or special occasions. Substituting stevia for the honey would help in making this truly “low-carb”. 3. Try to find high quality ingredients, for example “organic” items.Ingredients:
- 4 oz. softened cream cheese
- 3/4 c. softened butter
- 1 T. vanilla
- 4 large eggs
- 1 c. coconut flour
- 1/3 c. honey
- 1/4 t. baking powder
- 1/3 c. cocoa powder
- 1/3 c. cream
- 1/2 c. chopped walnuts (optional)
Directions:
Spray 8″x 8″ pan or regular muffin pan with cooking spray.
Mix together the dry ingredients in a separate bowl.
Beat cream cheese until smooth. Beat in butter, vanilla and honey. Add in the eggs. Add dry ingredients and cream. Fold in nuts if using.
Pour into pan. Bake at 350 degrees for about 45 minutes for square pan or 15-25 minutes for muffin pan. Place pan on wire rack and cool completely, then place in refrigerator overnight. Makes 12-16 “brownies”. Store in refrigerator or freezer.
