Acorn Squash with Apple Raisin Filling
Ingredients:
- 2- 2lb. acorn squash
- 2 1/2 – 3 c. apples, peeled, cored and cut into 1/2 in. pieces
- 1/2 c. raisins
- 2T. maple syrup
Directions:
Pierce squash with a fork in several places to allow steam to escape. Place on a paper towel in microwave oven. Microwave on high 7-8 minutes, turning and rearranging once. Let stand 5 minutes. Mix remaining ingredients in a separate bowl.
Cut squash in half crosswise. Discard seeds and strings. Put cut side up in a microwaveable dish. Fill each half with the filling. Cover with vented plastic wrap and microwave on high 6-8 minutes, rearranging once, until barely tender. Let stand covered 5 minutes. Makes about 4 servings.
Acorn Squash Buying Guide:
When purchasing fresh acorn squash look for ones heavy for their size, free from blemishes and bruises and with a hard rind. In season from October through December. Store in a cool, dry place.
