Like most vegetables, beets contain many healthy nutrients, among them being, Vit. C., several B vitamins, iron, manganese, copper, magnesium, potassium, fiber and antioxidants. Beets are considered to be heart healthy, liver friendly, helpful as a cancer preventative, helpful in preventing respiratory problems, vision friendly, anti-inflammatory, helpful in detoxification and helpful in treating depression. That purple color from phyto-nutrients are so very good for you!

Potatoe and beet salad. Cook potatoes like you would for potatoe salad and slice. Cook beets and slice. If you like onion in your salad, slice in some onion. Salt, pepper, vinnnegar and oil dressing.

Okay. In all honesty, I’ve never liked beets. Maybe I’ll have to give one of these recipes a try to see if anything has changed.
