Chick Pea- Green Bean Salad
Ingredients:
- 1 16 oz. can chick peas
- 12 black olives
- 1 c. sliced cucumber
- 1 t. basil
- 9 oz. frozen green beans, thawed, French cut
- 1 1/2 c. quartered cherry tomatoes
- 1 c. (4 oz.) feta cheese
- 1/4 c. olive oil
- 1/4 c. balsamic vinegar
- 1/2 t. minced garlic
- 1/4 t. each salt and pepper
Instructions:
Drain and rinse chick peas. Mix all the chick peas, olives, vegetables, basil and cheese together in a large bowl. Mix oil, vinegar, garlic, salt and pepper together in a separate container and mix well. Pour dressing in the large bowl with the other ingredients, cover and refrigerate for at least two hours. Serves 4 as a main dish, or up to 8 as a side dish.
