Indian Green Beans
Ingredients:
- 1 lb. green beans
- 2-4 T. oil
- 1 t. mustard seeds
- 1/2 c. chopped onion
- 3/4 c. sliced carrots
- 1 t. ground coriander
- 1/8 t. ground ginger
- 1-2 T. lemon juice
Directions:
Cut beans into 1″ diagonal slices. Heat oil in skillet or wok. Saute mustard sees until they pop. Add vegetables and cook, stirring constantly for about 5 minutes. Mix in spices, reduce heat, cover and simmer 8-10 minutes. Add lemon juice and serve.
Green Bean Buying Guide:
When purchasing fresh green beans look for ones that are bright, fresh looking and free from blemishes. Pods should be firm, crisp and snap easily when broken. Peak season is May through September. Store in a plastic bag unwashed and use within 2 days.
