Mediterranean Beef Stew
Ingredients:
- 2 lbs. stew beef
- 1 can cut up tomatoes
- 1 chopped green pepper
- 2 c. peeled sweet potato or butternut squash cubes
- 1 c. chopped onion
- 1 T. minced garlic
- 1-2 c. beef broth
- 2 T. tomato paste
- 1/2 c. dried apricots
- 1/2 c. dried pitted prunes
- 1 t. ground cumin
- salt and pepper to taste
- 1/4 t. ground cinnamon
- 2 small bay leaves
- peel of 1 lemon
- optional: 1 t. arrowroot powder mixed with 2 T. cold water to thicken sauce at end of cooking time, if desired
Directions:
Put all ingredients into crock pot and mix well. Cook on high 8-10 hours. Discard peel and bay leaves before serving. Add arrowroot at end of cooking to thicken sauce by adding to pot, mixing, covering and cooking a few minutes longer.
