Mexican Beef Stew
Ingredients:
- 2 lbs. stew beef
- 1/2 c. chopped onions
- 1/3 c. chopped green pepper
- 1/3 c. chopped celery
- 1 lb. cabbage, cut into wedges
- 4 potatoes, cut into wedges
- 1 can cut up tomatoes
- 1 T. minced garlic
- 1-2 c. beef broth
- 2 T. tomato paste
- 1/4 c. chili powder
- 1/4 c. raisins
- 1/2 t. ground red pepper
- 1/2 t. cinnamon
- 1/8 t. ground cloves
- optional: 1 t. arrowroot powder to thicken sauce
Directions:
Place all ingredients in crock pot (except optional arrowroot powder). Cook on low for 8-10 hours. If you desire to thicken the sauce, mix the arrowroot in 2T. cold water. Add it to the crock pot, stir, cover and cook a few minutes longer until thickened.
