I am continuing my series on leafy greens—one of the most nutritious foods you can eat in general. Check out my spotlight on kale, and my spotlight on turnip greens if you missed them before.
Mustard greens are high in vitamin K, vitamin A, vitamin C, folate, manganese, and vitamin E. Since they are in the cruciferous family they also contain cancer-preventing glucosinolates typical of all members of that family.

I have not tried all of these recipes. I can not vouch for their good taste. Also some ingredients may not be optimal. Please make your own healthy substitutions as needed.
