Tuna Banana Salad
Tuna Banana Salad
Ingredients:
- 1 13 oz. can tuna, drained (a brand that doesn’t have soy in it)
- 1/2 c. mayonnaise (a brand that has a good oil, and no corn syrup, such as Grapeseed Vegenaise—look at a health food store or Whole Foods Market) [second best is to use 1/4 c. regular mayonnaise and mix with 1/4 c. plain yogurt]
- 1 t. lemon juice
- 1/2 c. chopped walnuts
- 1/2 c. sliced celery
- 1 c. diced firm ripe banana
- salt & pepper to taste
- sprigs of watercress or dark green lettuce, washed and dried
- 16 cherry tomatoes
Instructions:
Combine tuna, mayo and juice in bowl. Add walnuts and celery, mix. Fold in bananas gently and add salt and pepper. Spoon equal amounts of salad on each of 4 plates and garnish with watercress (or spoon on top of lettuce) and 4 cherry tomatoes. Serve immediately. Serves 4.
