Turkey Fruit Salad
Ingredients:
- 1/2 c. mayonnaise such as Grapeseed Vegenaise OR 1/4 c. mayonnaise and 1/4 c. plain yogurt
- 2 T. honey
- 1/8 t. ground ginger
- 2 c. chopped cooked turkey (“leftovers” or deli meat)
- 1 c. chopped orange segments
- 1 c. chopped apple
- 1 c. seedless grape halves
- 1 c. cubed fresh pineapple
- 1/2 c. toasted pecan halves
Instructions:
Combine mayo, honey and ginger and mix well. Add remaining fruits and nuts and mix. Cover and refrigerate for at least 2 hours. Makes 6-8 servings.
